  4. Make ready 8 flour tortillas
  5. Take 3 cups shredded Mexican cheese

Stir in beef, garlic and chillies, and continue cooking until the meat is no longer pink. Add ground cumin, ground coriander and chipotle paste, fry for a few minutes, then stir in a tin of chopped tomatoes. Add a tablespoon of cheese and roll the tortillas closed. Place the filled tortillas, seam-side down, on the prepared baking dish.

  1. Brown ground beef and onions seasoned with salt and pepper and drain.

  3. Mix the other half of enchilada sauce with ground beef mixture and add 1 1/2 cups shredded Mexican cheese.
  4. Place small amount of ground beef mixture in each tortilla shell and roll up. Place each one in the baking dish
  5. Top with 1 can red enchilada sauce and the remaining cheese.
  6. Bake uncovered at 350° for 20 minutes. Garnish with diced tomatoes, lettuce and sour cream

Add a tablespoon of cheese and roll the tortillas closed. Place the filled tortillas, seam-side down, on the prepared baking dish. The enchiladas will be nestled right next to each other, and that's okay. Wrap the tortillas tightly around the filling and place seam side down in the baking dish.
