The jury if out on best but butchers paper is the middle ground. Cook for another 2 hours, then spritz and add BBQ sauce and smoke for a last 1 hour. 2-2-1. If your ribs arent Baby back do 3-2-1 (3hrs, 2hrs. 1hr)
