Method Heat the vegetable oil in a large pan, add the beef and cook until it starts to brown, then add the chopped vegetables. Next add the thyme, garlic, tomato puree, beef stock, chopped tomatoes. For the meat sauce, put the oil, celery, onion, carrot, garlic and pancetta in another large saucepan. Gently cook together until the veg is soft but not coloured.

  3. Repeat the layering twice. Cover béchamel with a layer of lasagna sheets, and spread over the remaining béchamel. Sprinkle over the cheese and bake for 30-40 minutes, until the pasta is tender and cheese is golden brown. Cover with foil if necessary during baking, to prevent cheese from burning.

For the meat sauce, put the oil, celery, onion, carrot, garlic and pancetta in another large saucepan. Gently cook together until the veg is soft but not coloured. For the white sauce, melt the butter in a saucepan. Add the flour and cook over the heat for one. To make the Bolognese, heat the oil in a large heavy based saucepan over medium heat.
