  1. Get 1 Beef top rump roasting joint

  3. Take Good quality whole grain mustard
  4. Prepare Bunch chives
  5. Take Rapeseed oil

Combine mustard, oil and garlic in a bowl. Rub top side of beef with mustard mixture. Place the beef in a roasting tin, rub the mustard over the skin, season and place in the oven. Sieve the flour and a pinch of salt into a mixing bowl.

  3. Remove from pan & cook in hot oven for 20/25 mins depending on how you like it cooked.
  4. Remove from oven & rest for 15 minutes. Smear mustard on top side then roll in finely chopped chive. Serve as desired.
