- Cut the kabocha squash into small pieces. Put them in a heatproof bowl, wrap and microwave for 8 minutes. Mash when softened.

For example, the other day I had some leftover roasted butternut squash, so I used that instead and oh my….they were delish. Stir constantly while boiling a few more minutes until mixture thickens. Stir in coconut milk, fish sauce, ginger, and curry powder.
