The ingredients needed to make Meat Curry:
  1. Get A. Any Meat - blanching meat is optional
  2. Get 1 kg meat - cut/sliced (i use beef steak)
  3. Make ready B. Dry Spices
  4. Take 2 cinnamon sticks
  5. Get 4 star Anise
  6. Take C. Blended (with 1/4 c water)
  7. Make ready 1 brown/yellow onion (Big)
  8. Prepare 1 red onion (Big)
  9. Get 4 garlic
  10. Make ready 1 inch ginger
  11. Take 10 dried chillies or more (cut, soaked & softened)
  12. Make ready 5 candlenuts/macadamia (opt)
  13. Make ready D Wet spices - make into PASTE
  14. Get 1 C BABA curry powder + 1/2 C water (see pic)
  15. Take 1 tsp seedless tamarind paste + 1 tbsp water-can use concentrate
  16. Make ready E. Extras
  17. Get 6 big potatoes - cubed
  18. Get 1/2 C - 1 C cooking oil
  19. Get 2 tsp chicken seasoning powder
  20. Make ready To taste - Salt
  21. Take Note:
  22. Make ready Dried chillies can be substituted with chili paste

If the curry gets too thick, add a little extra water to the pan to thin it. While the curry is simmering, take this time to make some rice or cauliflower rice to serve it with. The kofta curry (meatballs) in this dish can be made with beef, lamb, or chicken, garlic paste, and garam masala. The chicken is marinated in yogurt and an incredibly complex mix of spices, and then roasted in the extremely hot tandoor oven.

Instructions to make Meat Curry:
  1. Prepare ingredients. Cut and clean beef. Boil beef in pot of water enough to cover the meat (Don't boil too long). What you can do is bringing water to a simmer, then drain and rinse.The reason for doing this initial boil and subsequent rinse is to loosen the congealed blood and any caked dust/dirt/grime in meat from cutting and thawing. This is totally optional; my personal preference depending on the type of dish. There are however many ways you can prep your meat. You can skip this process.
  2. Blend all ingredients in B. Prepare wok. Heat 1 C cooking oil over medium heat. Dont worry about the oil (it may look much but you do need alot and depending on the amount of paste and blended ingredients you have, sometimes u need more or less). Add B-dry spices, leave in hot oil until aromatic. Next, Add in C. Sauté until fragrant. Add D. Cook until aromatic and oil separates from the paste (oil floats to the top of the paste). It takes around 5mins or more over medium heat. Keep stirring.
  3. Once the oil separates from the paste, add meat/beef. Add 1/2 C of water. Cover and stir occasionally. Covering the wok or pan at this stage will allow The meat produces juice or liquid. Stir occasionally and leave until meat is cooked through. Next, Season with chicken granules. Taste. Add salt if necessary. Simmer for another 30mins or until meat is almost tender. Add cubed potatoes. Continue cooking until potatoes are fork tender. Serve with steamed rice.
  4. Note: The consistency of the curry is very much a personal preference. Start with 1/2 c of water. The meat itself when covered during cooking will produce just enough liquid. Add water only necessary when adding in the potatoes.

The kofta curry (meatballs) in this dish can be made with beef, lamb, or chicken, garlic paste, and garam masala. The chicken is marinated in yogurt and an incredibly complex mix of spices, and then roasted in the extremely hot tandoor oven. Don't worry if you don't have a tandoor clay oven. Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice. curry.
